[livejournal.com profile] curiouswombat asked in a comment on someone else's post about kosher salt and how it differs from table salt. I wasn't sure myself so I looked it up and this is the first google hit I got. It sounds like what I vaguely remember being told in the past. I don't think I've ever bought it - we just get regular table salt, though right now I have a jar of Everything Bagel Seasoning, which includes some really good flaky salt - maybe kosher salt?

Basically it's flakier that table salt, which chefs love and which makes complete draining of blood from meat easier (thus adhering to kosher dietary standards). That's a simplification obviously. The article is short and informative.
